And Quick. Sometimes this is what we all need in getting a health meal on the table in a busy week.
Simply toss chicken thighs with a bit of oil, some fresh squeezed lemon juice and a few spices and there you have it.
Soak skewers for a half hour before grilling to prevent the sticks from burning.
If you do not have the time to soak the skewers beforehand you can always grill or cook the chicken on a grill pan and skewer them before serving or simply bake.

Easy Skinless Chicken Thighs on Skewers

Ingredients
- wood skewers, enough for the number of chicken thigh slices, soaked in water for one- half hour
- 8-10 boneless chicken thighs, fat removed then cut into one and a half inch bite-size pieces
- 2 tablespoons olive oil
- juice of one lemon
- ½ teaspoon red pepper flakes, approximately, more for spicier chicken
- 1/2 teaspoon coarse kosher salt
- 1/2 teaspoon cracked black pepper
Instructions
- Soak skewers in water, remove after one half hour, set aside
- Preheat well-oiled grill at medium heat, or oven to 350 degrees
- Add chicken thigh pieces into a large bowl
- Stir in oil, lemon juice, hot pepper flakes, salt, and pepper.
- Marinate chicken fifteen minutes
- Thread chicken thigh pieces onto skewers
- If grilling, cook skewers around eight minutes per side, or until just done
- If baking, no need to soak skewers, cook on a parchment lined baking sheets for twenty-five to thirty-five minutes until done, skewer thighs once cooked if desired
