Roasted Turkey Sandwich, Avocado, Tomato, Arugula, Muenster

Many good values revolve around the Thanksgiving Turkey each year.

Turkey is a food that singly reserves a special respect, from choosing the perfect bird just the right size, engaging thought into its preparation, sharing it with others, savoring it slowly, and showing thanks and appreciation for the bounty bestowed on us.

The turkey is also a creature that evokes consciousness of not wasting leftover food and using it up in any variety of creative ways, like the much-treasured Roasted Turkey Sandwich.

Perhaps you have a favorite turkey sandwich. One of my favorites is Roasted Turkey Sandwich, Avocado, Tomato, Arugula, Muenster

However, if your home is anything like mine following a holiday meal leftover roasted turkey is quickly in short supply including once the elderly relatives, who also really appreciate their turkey sandwiches the following day return home with leftovers, and the immediate family begins to make many quick trips to the refrigerator within hours of the meal.

When you are lucky enough to have a roast turkey leftover surplus turkey is nicely compatible with so many ingredients.

Using a good crusty roll, like a Portuguese roll, hard on the outside, airy and soft on the inside, layering the roasted turkey onto the bottom half, topped with the avocado mixture, a slice of muenster cheese finished with a little handful of arugula is a heavenly sensation!

To this sandwich you can also add a couple of cooked slices of bacon provides a little extra crunch.

Either way, a delicious sandwich to enjoy after the holiday meal if you are lucky enough to have leftovers, or any time of year, Roasted Turkey Sandwich with Avocado Tomato, Arugula, and Muenster Cheese.
