Steamed Brussels Sprouts with Red Onion and Bacon

Ingredients
- 1 pound Brussels Sprouts, loose outer leaves removed and large stems cut still keeping each intact
- 1 small Red Onion or half of a large red onion, chopped
- 4 slices bacon
- bacon grease
- 1 Teaspoon Butter
- salt and pepper to taste
Instructions
- Boil water in a pot set with a steamer basket, tumble Brussels sprouts into the steamer and cover with a lid. Check vegetables for tenderness at around 6 minutes, steam just until fork tender all the way through, and still bright green taking care not to overcook. Once done immediately remove vegetable to a plate to cool.
- Cook bacon in a large nonstick pan until crisp, transfer onto a folded paper towel to absorb grease, then chop into small pieces, reserve the bacon grease in the pan, drop in a teaspoon of butter then topple in the chopped red onion, cook on low heat, around five minutes, until onion until translucent.
- When ready to serve, warm the pan with the bacon grease and onion mixture, toss in the Brussels Sprouts, stir through, add in the chopped bacon, stir and warm through, season with a pinch each of salt and pepper
- Note: Earlier cooked Brussels sprouts with Red Onion and Bacon may be gently heated in the microwave just before serving
