Broccoli Rabe and Swiss
Have you ever been so busy that all of the sudden you realize you have not had time to eat and you are famished?
You open your refrigerator and just put something together leftover from the day before, and then wow, it turns out to be one spectacular meal.
Loaded down with bags of food after returning from the market I could barely wait to empty them. At first glimpse, I spotted a covered dish of broccoli rabe sautéed in garlic and olive oil from the nights previous dinner, yanked off the shelf I then grabbed the wrapped package of sliced Swiss cheese from the deli while pulling the just purchased crusty roll from its paper wrapping.
Three consecutive beeps alerted me the broccoli rabe was warm and ready for stuffing the bright crunchy greens into the crusty bread lined with the Swiss cheese before taking a couple of giant bites, ah, food. Hunger assuaged. Comfort restored.
A small pinch of sugar while sautéing the greens provides the perfect balance with slight bitterness of the greens.

Broccoli Rabe and Swiss
Ingredients
- 1 baguette, cut in half, sliced lengthwise
- 1 bunch broccoli rabe (rapini)
- 4 cloves garlic, chopped
- 2 tablespoons olive oil
- pinch sugar
- 4 slices Swiss cheese
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350 degrees. Rinse broccoli rabe in a colander, shake leaves leaving some droplets of water clinging to the vegetable. Heat a large saute pan on low heat, pour in olive oil, sprinkle in garlic stir all about, topple in the broccoli rabe letting the steam from the droplets of water cook the vegetables while preventing the garlic from browning. Sprinkle in a pinch of sugar and using tongs stir vegetable around pan uniformly cooking until wilted but still bright green, around 3-5 minutes.
- Meanwhile, with the remaining olive oil, brush the inside of the roll all across the top and bottom of the baguette then place four cheese slices across the top, flatten open a bit, then bake until cheese is melted, mound broccoli rabe onto the bottom half of the baguette and close sandwich, cut baguette sandwich in half
