Baked Chicken Panko in less than an hour

Ingredients
- spray cooking oil
- 4 chicken breasts, boneless, sliced in half lengthwise
- 2 cups panko bread crumbs, approximately
- 1 stick butter, cut into some coarse pieces
- each slice
- few sprinkles each garlic powder, salt and pepper
- Equipment:
- broiler pan large enough to hold 8 slices of chicken, the lower pan lined with aluminum foil
Instructions
- Spray cooking oil over the top of the broiler pan
- Pour panko bread crumbs into a shallow bowl
- Tumble butter into a very small saucepan and melt on very low heat, once melted, transfer to a shallow bowl
- Dredge chicken in the butter coating well, transfer to the panko bread crumbs, dipping chicken on both sides transferring finished pieces to the broiler pan until all of the breasts have been coated
- Sprinkle garlic powder, salt and pepper across the tops of the chicken, then drizzle over the remaining melted butter
- Refrigerate for twenty minutes to set
- Preheat oven to 350 degrees
- Bake chicken for fifteen minutes, turn chicken over and bake another ten to fifteen minutes until golden browned, and juices run clear
