Sunitha’s Chicken Biryani. Our first draft began just before Diwali last November, passed along to me by Jen, the editor of our area “Blue Bell’s Finest” magazine.

Shortly following the grand Diwali “Festival of Lights” Party of the Indian Community within our development, Sunitha and I then began our journey together observing, preparing, unraveling, and writing the recipe on one of the world’s most complex culinary preparations, Biryani. This particular Chicken Biryani recipe, that of Sunitha’s family.

Not sure about you, but it already seems as if the New Year was ages ago. Last week I featured Collards with Bacon served up as part of my lucky New Year foods. Another among lucky foods prepared on this hopeful holiday always includes some version of black eyed peas. With the neighbors behind me having just returned from the holiday’s in Florida, I decided to prepare Black Eyed Pea Salad with the plan of sharing half the batch as a sort of welcome home while sending good luck their way.

With New Year celebrations still a couple of days ahead many of us are still in the midst of the annual holiday foods extravaganza. I thought it might be fun to share this Roasted Eggplant, Red Pepper and Artichoke Dip, a lighter, healthier party appetizer. A wee touch of freshly grated Parmesan provides just a little salt balance pop combined with some healthy veg based ingredients for lots of tasty flavor in the noshing.
