Steamed Brussels Sprouts in Red Onion and Bacon

- 1 pound Brussels Sprouts, loose outer leaves removed and large stems cut still keeping each intact
- 1 small Red Onion or half of a large red onion, chopped
- 4 slices bacon
- bacon grease
- 1 Teaspoon Butter
- salt and pepper to taste
- Boil water in a pot with a steamer basket. Place Brussels Sprouts into steamer and cover with a lid. Check vegetables for tenderness after about 6 minutes, or until fork tender all the way through, and still bright green taking care not to overcook. Once cooked remove immediately to a plate to cool. Cook bacon in a pan retaining the leftover grease, remove bacon to a paper towel when crisp, then chop into small pieces. Add a teaspoon of butter to the bacon grease then add the chopped red onion. Cook onion until translucent. When ready to serve, add the Brussels Sprouts to the pan with the bacon grease and onion and warm through lightly, add in the chopped bacon, once warmed through season with a little salt and pepper and serve.
- Once cooked the Brussels Sprouts with Red Onion and Bacon are cooked they may be briefly heated in the microwave this will avoid overcooking and maintaining the bright green color.
